However, I too seem to be having trouble with delayed text that are 10 seconds or more.
Even when corrected with VLC's subtitle delay assist ("G" and "H" key).

This apparently depends on the type of movie you view. There is no delay present when using the subtitles on the iTunes version of the movie, the one used to translate and make the subtitles for.
To hopefully find a fix, I need to know if you are trying to use the subtitles on the Blu-ray, DVD or another form.

You have to find a way to buy it from the French iTunes/Google play shop, or order it from the French Ankama shop on DVD or Blu-ray, and add these fan subtitles to it. I won't give illegal options of watching it, as stated in the journal.

The fan subtitles are files which you drag into, say, VLC media player when you play the movie on your computer. It will display the subtitles then.

You are forgetting the existing timeline with your order. The best way of viewing (with the correct time line) is:
1. Goultard le Barbare / Goultard the Barbarian special

3. Dofus Livre 1: Julith
4: Ogrest la légende / Legend of Ogrest special
5: Noximilien l'Horloger / Noximilien the Watchmaker special
6: Wakfu season 1
7: Wakfu season 2
8: Wakfu manga
9: Wakfu OVA
10: Wakfu Season 3
- Goultard's story takes place between ±300 and 350.
- The animated Dofus franchise takes place between the year 397 and 400.
- Ogrest's Chaos occurred in the year 789.
- The animated Wakfu franchise takes place between 981 and 989 (minus season 3).

Is it wise to watch the Nox special before season 1, though? It spoils a lot of stuff.

Timeline order doesn't really matter to understand things, especially since there are centuries between each sub-franchise.
On the other hand, watching Dofus series before Wakfu S1 will have you wonder what a Shushu is (when Luis is introduced). Watching Ogrest OAV before Wakfu S1 will have you wonder who are Alibert and Yugo at the begining.
Overall, I'd stick with real life release order, with the only exception of the Dofus movie that should be watched before the 3 Wakfi OVAs, so your first suggestion was quite spot-on
