There are only 3 problems that are in the way that needs to be taken care of before this even happens:

1. How many enchiladas should we order for the executives and the other important peeps at Disney.
2. Where would we make a funding page to chip in and make this happen (and also getting enough people to do it so that it won't be a financial burden for anyone to pull this off)? We could try and get 100 people to chip in $2.50, but we need to get them on our side and trust us, and even then, we might have to worry about additional money for a delivery fee/possible gratuity tax.
3. How to tell the restaurant to say that this is a kind gesture from a campaign to save the show.

Once these three things are nipped in the bud, then we will essentially have one of the most effective protests Disney has ever faced.

I think the hardest part is figuring out how many enchiladas were going were first have to look in to that.
Second the the Mexican place that you pointed out earlier is not too far from were I live. If we can construct a Save Wander Over Yonder fandom letter I could go down to the restaurant myself and ask them to have note delivered with the food. 
Once we figure out the total cost we can start worrying about the fundraising page. But let stay positive. I'll go down there tomorrow and see they can accommodate are order. Also I need the address of place where going to have the food delivered to.

If you want to go symbolic, we could have either 80 enchiladas, after the total number of episodes Disney feels satisfied with ending the show with, or 120, after the total number of episodes we would like to see the series finish with.

Now, I am pretty sure that some of the staff/execs are going to be vegetarian (like Wander, of course. ), so I'm thinking that we could have half of them be beef and the other half be cheese. According to the full menu on Yelp, an a la carte cheese enchilada is $1.99 while a beef/chicken one is $2.49 (if we do decide to go with 120 enchiladas, we could each have 40 cheese/chicken/beef, after the fact that seasons 1 and 2 each have 40 episodes, and the 3rd flavor would represent us wanting 40 more, give or take.  )

I decided to do some rough calculations on cost estimates (keep in mind this isn't counting how much the delivery fee/gratuity tax could be), and ordering 40 cheese enchiladas would be $79.60, while 40 beef would be 99.60 (times that by two, should we go for 40 beef AND chicken, it would be $199.20). SO, long story short, if we go with 80 (40 cheese, 40 beef), the rough estimate would be $149.20, while the 120 enchiladas (40 cheese, 40 beef and 40 chicken) would be $278.80.

And yes, we can construct a fandom letter on behalf of SaveWOY, and fill it with tons of different fanart and the like! I unfortunately can't draw worth to save my life, but I have some pictures of a friend of mine's Wander plush that I could include in the letter. We could also print out the signatures of the petition(s) as well to prove to Disney that we are still a viable fanbase. Either way, we gotta try and do it in a way that won't make it look like we're harassing them, but giving them a free lunch out of the good faith from all of us. I am hoping that we can show this plan off to the SAVEWOY group as well as Tumblr.

And lastly, I don't think sending the enchiladas to Disney XD would work, but if we send them directly to Disney's HQs, where the top execs are, it would be more effective.

This is the best (and cheapest) restaurant I could find that does delivery; the enchiladas are in the $2.49 range. Not sure how much it would be to make a delivery, but you get the idea.

Now that I think about it, you might be onto something. We could get a local mexican restaurant in the Burbank area to make a large batch of enchiladas for the Disney offices.

This would be in a similar fashion to how fans of Mass Effect 3 protested the endings by sending Bioware cupcakes from a local Edmonton bakery with 3 different icings, but all of them are the same flavored cupcake, referring to how the players' choices didn't matter since they all lead to the same conclusion.

Petitions are great and all, but if we want to send Disney a message that is even more effective, we give them something on the physical side, since like most big companies, they pay more attention to the real world protests than the online. That's what made Jericho's campaign a success all those years ago; you can whitelist emails and ignore online petitions all they want, but they can't turn down (or at the very least, ignore) mayo/mustard, and enchiladas.

The only thing we need to do on this end, is to get people to group together and make this happen somehow.

I know. The mayo and mustard campaign would be cheaper, and it wouldn't rely on everyone having to donate money just to make the enchilada delivery.

That would be even better, but I'm sure they would go bad pretty easily, even if they were frozen. 

As long as the mayo/mustard is unopened, they should last a good while. Hopefully, Disney will have so much condiments, their heads will spin.
