other than being ink, she reacts to attacks like a normal person? like if somebody stabs her, she dies. (not turns into ink and repairs herself)?

If she gets stabbed, she bleeds ink. She can lose more ink than people can lose blood, but eventually it does lead to the same. When she's lost enough to 'die' however her ink seals rearrange to try and fix this but while this happens she can't do a thing.
If someone attacks her seals with magic instead of a physical attack she can lose her form into a goopy mass that leads to a similar state of inability.

A bullet to the head would contend with one of the major seals, the light seal, breaking it instead of her. A second shot to the head is fair game.
