Description My mom still talks about how, when she was a child, everyone in the rural areas who relied on growing their own crops would get extremely hungry for green vegetables in late winter after they had run out of their canned vegetables from the last growing season. The country folk considered the pokeberries poisonous, but as soon as the green leaves began to develop (one of the earliest to do so), they would pick the leaves and cook them until very soft, and eat them.

They called this delectable concoction "Poke Salad."

You know, I've never had it? We still eat "Creasies" (I guess a form of land cress that the locals in Virginia harvest from their corn fields), but I've never had the opportunity to eat poke salad.
