Description This is the cake I made for my boyfriend's 29th birthday last Friday. The cake is 4 layers of sponge cake, filled with custard and raspberries, coated with meringue and then decorated with glazed meringue quenelles, raspberries and almonds.

I know, I'll say what we're all thinking: I'm terrible at quenelles.

Despite the weight of the cake, how much liquid and sweetness is in it, the final product is light on the palate and not the sweetness overload I was wary of. The thick layers of custard were soaked up by the sponge overnight and the airy meringue covering it made for a refreshing change from icing. The almonds and berries offset the sweetness, as did the light, plain sponge.

this looks good but ive never been a big fan of soft meringue I like the crunchy ones that you bake on low for awhile... so fun hehe soft meringue.... maybe ive never done it right but the texture isnt appealing,... other than that looks looks tasty and i love custard!

I'm with you on that one: I love crunchy meringue and I love pavlova, but soft never appealed to me much. So I was surprised by how nice this turned out. I guess mainly because it was so thin, and the quenelles post-baking went more marshmallow-like, like a pav.
