Yeah, I did see all of them, but if I tell you I remember all of them I'll be lying
I took note while I watched though, here are the ones I also think that stand out:
16 (didn't like the color though), 22, 30, 36, 44, 49, 63, 67, 73, 81, 94-98, 127, 132, 150, 151, 154, 174, 182, 199, 200 bis, 205 bis, 214 bis, 217, 220 and 221... waiting for the new ones ^^

5 is one of my favorites, alike 28, but I like 28 more.
10 is one of the few stars that have a different back.
(All my stars of Eden except four or five are folded the same in the back)

Short answer: Combinating sequences of folds.
Long answer: These stars are folded in phases. First and last phase are always the same, so the stars looks similar. In the rest of phases a certain number of different folds are possible. A determined folding sequence of several possible in phase 2, other of several possible folding sequences in phase 3, etc.

Maybe it is the varnish.
I invented a star #9 bis. It has the same front pattern that #9, but the back of #9 bis is like the front of #9 too.

Mathematically I could get several thousand of stars.
All these stars share the same base and 99% of them have the same back (like the star named back in this set 01-10). I have gotten three or four different backs. Simply making these different backs in each one of the actual stars I could triplicate their number. In all the stars I can change the shape of the points. In all of them I can get three or 4 different type of points but in some of them I can make more than 8 points stars.
But I try to get new stars finding new shapes in the center of the star. That is more difficult.
