NPC stands for "Non Playable Character" and are the people or monsters you meet in a game. Any person you meet and interact with in a game that you don't control like a Pokemon trainer for example is an NPC.
I have a magical deep forest later in my game and cute little forest elves would make it seem less of a serious place.
