I think it is entirely possible to go for lifetimes without love. There are plenty of emotions available to drive people to continue living, but the idea behind immortality blues is that there may be a sense of ennui that arises someone starts to realize that every day brings nothing new, novel, or different, and the realization that every joy would inevitably precede the sting of loss. While I don't have any particular headcanon regarding Celestia's love life, I suspect that if I were in her position, I would feel isolated and alone, with not a suitor in sight that could understand and relate to my perspective and treat me as a peer.
That being said, I don't think your headcanon is impossible either. If you decide to make a comic about it, let me know, I bet it'll be an interesting read.

That is one of my favorite quotes. Here's another good one that I like:

Immortality is never an easy thing, even if you have others to be immortal with you, when does the time come that everything, even the bonds of friends and family lose their meaning and death feels so welcoming but you know you can never meet him. Then all you have left to do is run from yourself in a case that never ends, you could see all ends of the multiverse and see all the beauty it has to offer, but a part of you will always crave rest.
