The categories are basically just to describe how harsh the transition is of a stroke. In Photoshop, for example, you can adjust the hardness of a brush between 0%-100%. A hard edge means it is extra crisp and sharp, and thus creates a high contrast to surrounding areas. As you go down the chain, firm-soft-lost, they blend more slowly with the surrounding areas, and are less contrasting.
