In photoshop, I use the lasso tool to select the parts I want to keep, then copy them into a new layer.

This really does remind me of the cathedral at Bury st. Edmonds. They have a really nice court yard like the background used in this image. I think you have done a wonderful job with placement of the subject and the lighting has been captured well. I really like this a lot and missed your work.
