It is sort of difficult to explain incense in a culture where it is not that common, but it feels VERY natural in a culture where its usage is commonplace.
The worship of the Old Testament (and New) is liturgical. It involves community, but it also strives to affect all the senses. You make prostrations with your body, you see the clouds of incense and sacrifices, you hear the prayers and trumpets - why should the nose be left out of the fun?
Also, incense was expensive - burning it on a daily basis was a true sacrifice. You destroy something valuable without getting absolutely nothing in return.
