I take it you mean as mounts? 'Cause if there's, say, cowboys or riding-school students VS zombie horses stuff out there then I'd like to know!
Honestly, I'll take just about any zombie mix over just the basic human ones.

Learn some general art "rules" alongside doing pixels. Look for some art tutorials on yt and pixel art tutorials here, etc. and apply things that you learn right after you watch/read them. Practice it for some time before you watch a new one.
Draw a lot everyday. Don't hurry to finish - do your best even if it takes a long time. Don't give up - mistakes and failures are a normal and important part of learning. Draw things you enjoy - having fun is very important for staying motivated.
