It will grow to 35 inches tall, close to one yard tall. This was my first year growing this, and what I read said it would die if it gets below 55 fahrenheit.


I cut a lot of it to make sure I get it before it freezes, but it is growing back. I didn't want to uproot the root system, so it can grow back. Then later I found out it takes 2 years to mature, and reach the end of life. 


I try to grow things I use so I get it fresh from the garden, and spices are something that is much better fresh.


I didn't think about the expiration date of dry spices before, but seeing some were expired for 7 years, I checked to see what is smelled like. You know what fresh cut straw smells like, or a bail of hay? If you do, then that is the smell of bad spices, and who wants their spaghetti sauce taste like dry weeds. 


Celery is normally just dry seeds for the spice, while I take the leaves and dry and grind them into a powder. Most people never heard of powder celery. I use it to make pizza sauce, and everything that is chicken, but chicken fajitas. You don't need to see it to have that taste, but I also freeze the chopped celery stalks to use in cooking. I can say one thing about this celery, it is not stringy, and it has a stronger flavor, so you can use less if you want.

The reason I put it in pizza sauce is to make it taste sweeter, while using it just makes the pizza sauce smell and taste like pizza sauce. I made some and a few people said that would taste bad, because you used too much oregano, and then they said it smelled bad. Later they had no clue what was in the jar in the refrigerator and smelled it and said that really smells like pizza sauce. Some people use their imagination not their taste buds to taste food. I cook with my taste buds and use my nose to smell. I am sure that is how all cooks should be.
