Electromagnetic field. You pass a mist of ionized metallic fluid (plasma) through the field, and it is accelerated, creating thrust. We call them Ion Engines. Ours do not work within the atmosphere. Given that Star Wars is set in another Galaxy, and is far more advanced than us (at least 50,000 years), it works for them.

I hear this alot and the simple answer is it's not a turbine! It may look like it but there are actually no spinning fans in them. You can see this clearly in the TFA Incredible Cross-sections book.
Also, what use is a turbine in space?
