always made no sense to me how a gargoyle could have a beer-belly like Broadway did. Wasn’t there an episode that explained that their bodies metabolized like a million calories a night… ?

I think you're thinking of the episode were Sevarius was explaining to Xanatos that their stone skin absorbs needed proteins during the day in order to produce the amount of energy needed to power the muscles that allow them to fly. something about one gargoyle having to eat the equivalent of 3 cows a night to manage that energy.
