oh i can;t stand cinnamon since making a carrot cake with too much cinnamon the smell and taste has put me off ever since

Tried that, but everything, even classical like mozart, would distract me. I study best with complete -ahum! as if that's possible with noisy neighbours and their kids and dog...- silence.

With concentration things; no distractions allowed. Though I love it while baking/sewing/cooking or whatever, and when knitting or crocheting -unless it's a complicated pattern or some new technique- I usually watch a movie or currently House.
With reading though, also for fun, I usually want quiet, unless it's raining and storming out =^.^=

I'm glad that you were determined to succeed and did! My baking failure has been a buche noel. My first attempt six years ago was a disaster and when I tried again two years later it looked awful (tasted good, but presentation is always key). I may try again this year (crosses fingers).

there is now only one thing left i think on my list of disasters that have been so bad it has put me off trying again and that is carrot cake. don't know if i ever will get around to trying it again though because i don't normally have cinnamon and nutmeg and things like that in the house as i hardly use them and seems a waste to just buy it for one baking session that may or may not work, if it wasn't for that i probably would.
It's good to go back and try and succeed where you have previously failed, gives me a greater satisfaction than then when achieving a new recipe i have never tried before.

Clare....whats the difference between vanilla extracts and flavouring?
I've tried both in my sponges, and it only seems to be the flavouring that tastes and smells....

extract is real vanilla, flavouring is all artificial. i tend to use flavouring though as is easier to find and less expensive.

it should be, if you watch cooking shows, chefs are constantly saying to use extract and not the test tube stuff! they really have a huge dislike to it!

i haven't used extract since i was at school. Maybe i should give it another go too! i don't mind paying that little bit extra now and again if it improves the taste but i can never really tell the difference either

indeed! they certainly are not subtle even before they can talk! Sarah used to take her plate, put it in the hallway just outside the door and shut the door on it! Sasha now she just throws it in the bin!
