You did mention that these colors, for my camera especially, are difficult to achieve..My whites and reds are usually blown out when the subject
is as vibrant as this Male is....

Yes, the large tonal range makes it difficult to achieve a good dark/light balance, M, especially when these guys are moving. I usually use the "spot" evaluation for exposure with bird photography or else the background contributes too much to the exposure setting, normally resulting in under exposure of the subject. But, if the spot meter is focused on the colour plumage, the white ruff is always over exposed. So, you need to get the exposure correct for the white collar and hope the "blacks" are not under shot. Then, you've got the problem of an individual colour channel, normally red, getting blown - as you have found. Early morning light seems to be helpful as the Sun is not a high intensity.
