Ah, our DLF (Dear Little Frenchman). Best character in the show, imo. A fine example of the ISFP type. Rendered in your adorable style.

I've been obsessed with MBTI lately, so prepare for a lengthy response.
I determined LeBeau's type using cognitive functions. ISFP stands for Introvert, Sensing, Feeling, Perceiving. But what defines an MBTI type is the most developed introvert function and the most developed extrovert function. Just knowing your four-letter type is fine, but to really understand it, you need to know cognitive functions. It's like understanding that water is a clear, colorless liquid vs. understanding the chemical composition of water.
LeBeau's dominant cognitive function is introverted feeling (Fi). This is also my dominant function, so I find it easy to spot in others (I'm an INFP). Fi is characterized by having a set of internal, closely held values, and tends to prioritize information according to these values. Fi users have a strong sense of identity, and while they may or may not have a temper, one sure-fire way to tick them off is to challenge their most closely held values (which Newkirk loves to do). Fi users internalize their emotions, and therefore may not always show them up front. But at the same time they do tend to be very sentimental. The Fi user is a "follow your heart" type of person.
LeBeau's auxiliary function is extroverted sensing (Se). Se users live very much in the moment, immersing themselves fully in the world around them. To the Se, everything is about sight, smell, sound, touch or taste. Se users tend to be rather worldly for this reason. They prefer the experience to the outcome. They don't feel the need to remember the past, and they're not concerned with the future.
Combining Fi with Se makes an ISFP. The combination of internal value and identity with sensuality and a desire to experience the world via full immersion results in a personality type that tends to be very artistic and expressive. ISFPs tend to love art in most, if not all of its forms, and they are almost always skilled in at least one artistic pursuit. LeBeau's artistry is expressed through his cooking. You can find out more about the ISFP type here.
ISFP strengths and weaknesses that LeBeau exhibits include:
Charming - This is a strength of Se in general, but is especially useful when combined with Fi, as Fi users can hone in on exactly what makes someone special in their eyes. And no one need explain what a charmer LeBeau can be.
Sensitive to others - He may try to deny it on occasion (such as claiming to hate German dogs), but LeBeau is a rather sensitive person, able to see past a person's nationality and get to know them for who they are. This is especially true of his relationship with Newkirk and Schultz.
Imaginative - Who else can take camp rations and turn them into gourmet cuisine? Who else can turn dog food into the most popular hors d'oeuvre at the party?
Passionate - Need I elaborate on this one?
Artistic - As said before, this strength manifests in LeBeau's cooking skills, as well as his appreciation for classic art.
Too independent - LeBeau has demonstrated more than once that if the others aren't willing to help him accomplish a personal mission, he is more than willing to go it alone. Sometimes he doesn't even wait for permission, and he usually is terrible at thinking his plan through before putting it into motion.
Unpredictable - When stressed, the only predictable trait LeBeau displays is impulsiveness. You know he'll try to do something stupid; you just don't always know what. If he does suppress anger or rage, there's no way of telling when he'll explode, or on whom he'll unleash his fury (Guess Who Came to Dinner - that poor, innocent meissen platter).
Easily stressed - Especially when he's voluntold to do something, or when his cooking is mocked by Newkirk.
Overly competitive - Even when he knows there is no real competition. This is especially true of his cooking. Tell him he can't make a certain dish tasted good, and he will accept that as a challenge. He really doesn't like the idea of leaving the cooking in the hands of another, even if he knows they're competent.
LeBeau is intended to be a stereotypical Frenchman: France, girls, food, art and France. These types are usually ISFP or ESFP. The Explorer (SP) temperament is fairly common, and it tends to be strongly associated with France. For all his talk about girls, it's pretty clear LeBeau is a patriot before he is a lover. This, plus his general demeanor around the others, tells me he's more of an introvert than an extrovert, using his Fi more than his Se (though he uses both a lot). As an ISFP, he should also use introverted intuition (Ni) and extroverted thinking (Te). He hasn't done much to demonstrate either of these functions, and his Te is particularly under-developed. This is why he sometimes comes across as impulsive and illogical. The only time I've observed him using Ni is when he grasps the concept of one of Hogan's plans before any of the others save Kinch (Kinch's dominant function is Ni).
