gaster is fated to fall into his creation and become non-linear, scattered through spacetime.
he cannot die before that happens, because non-linear gaster already exists at every point, an infinite entity cannot be destroyed by breaking one, finite piece of it. so, gaster is effectively indestructible, if it looks like he's dying, fate will shuffle events around to ensure he survives.
this anomaly (it's basically a player modding themself into the world based on the description) cannot kill gaster until the proper flags are triggered, so if gaster is between the anomaly and papyrus, the anomaly can't hurt papyrus either, because fate will always contrive a way for gaster to live, so anyone behind him will live too.
gaster doesn't know that yet though, he's trying to shield papyrus with his body and accidentally shielding him with destiny as well.

All right, so my theory is, is that THING is made out of a Gaster Blaster (duh), maybe Asriel's Hyper Goner, Gaster's Followers and Goner Kid, and possibly the black goop is Void. I think either Sans, Papyrus, or even an older, more insane Gaster after decades in the Void, is thrown in there too, since someone had to have known everything he had done. The reason I think it could be a hodge podge, is because you brought up how if something doesn't exist, then it will make it out of things that DO exist in the game files.

After all, in the info section of the previous comic, it even said the tar thing is basically you, even if you get mad at it.
So yeah, the monstrosity... it's the one behind the screen, watching and playing the "game".

reflecting back on this, a few months later, i wonder: is this a creature that someone "created" (in reference to the paragraph about creating something from nonexistent data values). some bloke was looking for something that doesnt exist, and this thing was the outcome of his search? or perhaps, i assume (an)other comment(s) has/have suggested, this is a future gaster, who has noticed a weak point and wants to check it out. it must have something to do with the skeles, seeing as its completely made of bones and... tar stuff. maybe one day we'll know...
and yea, i know i'm late. i've just been lured away by some hyperlinks in the description of the latest edition of "gaster tortures children and gets what he deserves but they're still traumatized!"

Ah, yet another piece of evidence Gaster cares for them. If you noticed, he said 'Not again' like he doesn't want loose his family again. He cares for them in his own way, if he really didn't care, he would've let them die. And if you remember, he's doing this in the first place to save Asgore. When he was shown the sixth soul he started trembling and told the king he was close to a breakthrough, and said he was sure that Asgore wouldn't have to do this anymore. He may not have said it in that exact way, but you could tell it's what he meant.

I once saw a YouTube video that explained that Chara was possessed by a being after they died and their soul was reawakened when Frisk fell into the Underground. The video suggested that Chara wasn't a demon child that wanted the destruction of both humans and monsters. When the player (and consequentially Frisk) start on a genocide run of Undertale, Chara's soul gets possessed by this entity. While the creature or entity wasn't really given a name, it was basically described as the embodiment of "Determination" as it's represented in the game. Your things to consider about the tar creature reminded me of that, which makes me wonder if that is what it is.
