Description
The distinction between Legendary and Sublegendary is coded into the games and is what determines if a legendary Pokemon is allowed in regular competitive formats or only allowed in restricted formats.Mythicals are Pokemon that are mostly available through events (meaning they're generally not obtainable through regular gameplay) and are thus not even allowed to be used in restricted formats.
UltraBeasts are merely a lore-based category, but the Pokemon company treats it as a distinct category (often to the point of excluding UBs from lists of legendary Pokemon), but they are technically sublegendaries in the game code.
EDIT: restructured the entire graphic, added Kubfu and Zarude, as well as prepared slots for the upcoming golems and Calyrex-group

While it's clearly related to them lore-wise, it's lacking the typical aspects mechanics-wise, as in the fact it doesn't have Beast Boost and the Beast Ball is not effective at catching it, but even when it's talked about in the story in that regard, it's speculative statements along the lines of "it's almost like an Ultra Beast". It also doesn't get picked up by the UB-radar after you caught all the UBs.
There is similar speculation being thrown around Cosmog, which IMO can be dismissed for the same reasons.
On top of that, if any of those were considered UBs, it would mess with the image a lot, as there would have to be an overlap of the UB category with the regular Legendary category... which, considering many people already get confused by UBs being a subset of sub-legendaries, would just make it worse xD
But I do have to point out that unlike "Legendary", "Mythical" and "Sub-Legendary, which are represented by 3 distinct markers in the actual game-code, the UB-term does not have a marker at all. So there is an argument to be made that the image should exclude UltraBeasts as a category altogether. I think the aforementioned UB-traits are very consistent and clear though, so I think it's fine to include it, unless we suddenly start getting all kinds of unique sub-categories like it in the future.
